Quando abbiamo deciso di produrre la nostra miscela Arabica Specialty The Steam Co., avevamo chiara in mente la missione del progetto, quello di produrre un caffè unico, per aiutare Barista a vendere caffè di alta qualità ai quotidiani clienti.

Studiando il profilo, abbiamo voluto evidenziare "Dolcezza e Equilibrio", i nostri due punti di forza che abbiamo avuto sempre in mente.

Abbiamo iniziato ad esplorare i caffè sul mercato, provando come lo Chef fa ogni giorno, a combinarli tostatura dopo tostatura.

La Composizione della Miscela Arabica 100% Specialty "The STEAM Co.":

Abbiamo finalmente trovato l'ottima base con il caffè Mantiqueira de Minas del Brasile che dona incredibili note di nocciola e cacao.

Aggiungendo l'eleganza e la complessità che l'Etiopia Bensa Lavato può dare.

Abbiamo aggiunto in fine note melassa e marmellata di mirtilli neri con il nostro Etiopia Yirgacheffe Konga Naturale.

A coffee we created for you, who are demanding and love a sweet and elegant coffee, with exotic aromas and full taste. A coffee that will spare you many stomach aches you've had until now. Forget the bitter taste! It's a promise. In this coffee, you find flavors of Hazelnuts, brown sugar, and butter cookies, but also much more.

When we decided to produce our Specialty Arabica blend The Steam Co., we had a clear mission in mind for the project, to produce a unique coffee, to help Baristas sell high-quality coffee to everyday customers.

Studying the profile, we wanted to highlight "Sweetness and Balance," our two strengths that we always had in mind.

We started exploring coffees on the market, trying as the Chef does every day, combining them roast after roast.

The Composition of the 100% Specialty Arabica Blend "The STEAM Co.":

We finally found the excellent base with the Mantiqueira de Minas coffee from Brazil that gives incredible notes of hazelnut and cocoa.

Adding the elegance and complexity that Ethiopia Bensa Washed can provide.

We added final notes of molasses and black blueberry jam with our Ethiopia Yirgacheffe Konga Natural.

"The STEAM & Co." is ideal with milk-based drinks, where the coffee can increasingly enhance the balance and sweetness of the milk itself, you'll discover an entire "pastry menu" in your mouth, like flavors.

GuideHow to choose
Nitrogen & vacuum sealing
Every pack is sealed in a protective atmosphere — first vacuum, then nitrogen — to remove oxygen. Unopened, the coffee stays fresh for up to about 2 months after roasting. Shelf life depends a lot on temperature and season: a little less in summer, a little more in winter.
Roast profile
We roast in two profiles, depending on your brewing method:
  • Light — great for V60/Aeropress, for those who want brighter acidity and lots of aromatics. Recommended for all pressure-free methods (filter, Aeropress and similar).
  • Medium — great for espresso/Moka, for those who want a more intense flavour with a hint of bitterness. Recommended for espresso and Moka.
Grind
Any grind works, as long as it suits your method. With us you can choose whole beans, or pre-ground for Moka or for filter.
Shelf life
For the best taste, enjoy it within 10–45 days of roasting (60 at most). The roast date is always printed on the label.

Espresso
  • Fine grind
  • Water at about 90–92°
  • Single dose 8–9 g (double 15–17 g)
  • Extraction around 25 seconds
Moka
  • Filtered or bottled water (never tap)
  • Medium-fine grind, don't tamp
  • Medium heat; take it off the stove as soon as the flow turns pale
Filter V60 / Chemex
  • Medium grind (medium-coarse for Chemex)
  • About 15 g per 250 g of water, at 90–94°
  • Bloom 30–40 s, total draw-down ~3 min
Aeropress
  • Medium grind, water at 85–90°
  • About 17 g per 200–220 g of water
  • Bloom 30–40 s, total time 2–3 min
