La Dolce Vita nasce dall'incontro di tre caffè Specialty, ognuno con un ruolo preciso:

  • Brasile Mantiqueira Rubi Naturale — dolcezza e struttura
  • Colombia Huila Lavato, Farm San Pedro — equilibrio e pulizia aromatica
  • Ethiopia Shakiso Naturale — eleganza e complessità aromatica

Un taglio tradizionale italiano portato a livello Specialty: rotondo, avvolgente e persistente.

☕ Moka

Scheda rapida: ☕ Dose 12–14 g (3 tazze) · ⚙️ Macinatura medio-fine · ⚖️ Rapporto ~1:11 · 🔥 Tostatura media

⚖️ Dosi e macinatura

  • Dose: riempi il filtro a imbuto raso, senza pressare (~12–14 g per la moka da 3 tazze, 18–20 g per la 6 tazze).
  • Macinatura: medio-fine, poco più grossa dell'espresso, consistenza simile al sale fino.

💧 Acqua

  • Usa acqua in bottiglia o filtrata a basso residuo fisso (50–100 mg/l): incide molto sul gusto.
  • Trucco specialty: versa nella caldaia acqua già calda (non bollente) fino a poco sotto la valvola. Riduce il tempo sul fuoco e il rischio di note bruciate.

🔥 Procedimento

  1. Inserisci il filtro, livella il caffè senza compattarlo, poi avvita bene.
  2. Metti su fuoco medio-basso con il coperchio aperto per controllare l'estrazione.
  3. Il caffè deve salire con un flusso lento e color miele.
  4. Appena il flusso accelera e diventa chiaro/biondo, togli dal fuoco; puoi raffreddare la base sotto un filo d'acqua fredda per fermare subito l'estrazione.
  5. Mescola nel bricco prima di servire per uniformare il caffè.

💡 Consigli

  • Non lasciare gorgogliare e sbuffare la moka: è segno di sovraestrazione e amaro.
  • Pulisci la moka solo con acqua calda: niente detersivi, niente lavastoviglie.

FULL DESCRIPTION

We have studied for many months how to create a balanced coffee that is not complicated to drink. A coffee that has all the characteristics of Specialty Coffees, without being as extreme as some of these can be. Equilibrium. We researched many coffees, and we came to the creation of La Dolce Vita, a tribute to the Italian spirit of sweetness and a strong but pleasant flavour.

We used our famous Brazilian Natural Mantiqueira Rubi Coffee as a base, combining the sweetness of Colombia Huila Washed from Farm San Pedro and finally the aromatic part of Ethiopia Shakiso Naturale.

GuideHow to choose
Nitrogen & vacuum sealing
Every pack is sealed in a protective atmosphere — first vacuum, then nitrogen — to remove oxygen. Unopened, the coffee stays fresh for up to about 2 months after roasting. Shelf life depends a lot on temperature and season: a little less in summer, a little more in winter.
Roast profile
We roast in two profiles, depending on your brewing method:
  • Light — great for V60/Aeropress, for those who want brighter acidity and lots of aromatics. Recommended for all pressure-free methods (filter, Aeropress and similar).
  • Medium — great for espresso/Moka, for those who want a more intense flavour with a hint of bitterness. Recommended for espresso and Moka.
Grind
Any grind works, as long as it suits your method. With us you can choose whole beans, or pre-ground for Moka or for filter.
Shelf life
For the best taste, enjoy it within 10–45 days of roasting (60 at most). The roast date is always printed on the label.

  • Fine grind
  • Water at about 90–92°
  • Single dose 8–9 g (double 15–17 g)
  • Extraction around 25 seconds
Moka
  • Filtered or bottled water (never tap)
  • Medium-fine grind, don't tamp
  • Medium heat; take it off the stove as soon as the flow turns pale
Filter V60 / Chemex
  • Medium grind (medium-coarse for Chemex)
  • About 15 g per 250 g of water, at 90–94°
  • Bloom 30–40 s, total draw-down ~3 min
Aeropress
  • Medium grind, water at 85–90°
  • About 17 g per 200–220 g of water
  • Bloom 30–40 s, total time 2–3 min
