The story of the lot

Full Description

La Dolce Vita is born from the blend of three Specialty coffees, each with a precise role:

  • Brazil Mantiqueira Rubi Natural — sweetness and body
  • Colombia Huila Washed, Farm San Pedro — balance and aromatic clarity
  • Ethiopia Shakiso Natural — elegance and aromatic complexity

A traditional Italian blend brought to the Specialty level: round, enveloping, and persistent.

Brewing recipe

☕ Moka

Quick guide: ☕ Dose 12–14 g (3 cups) · ⚙️ Medium-fine grind · ⚖️ Ratio ~1:11 · 🔥 Medium roast

⚖️ Doses and grind

  • Dose: fill the funnel filter level, without pressing (~12–14 g for the 3-cup moka, 18–20 g for the 6-cup).
  • Grind: medium-fine, slightly coarser than espresso, texture similar to fine salt.

💧 Water

  • Use bottled or filtered water with low total dissolved solids (50–100 mg/l): it greatly affects the taste.
  • Specialty tip: pour already hot (not boiling) water into the boiler just below the valve. This reduces time on the heat and the risk of burnt notes.

🔥 Procedure

  1. Insert the filter, level the coffee without packing it, then screw on tightly.
  2. Place on medium-low heat with the lid open to monitor extraction.
  3. The coffee should rise with a slow, honey-colored flow..
  4. As soon as the flow speeds up and becomes light/blond,remove from heat; you can cool the base under a stream of cold water to stop extraction immediately.
  5. Stir in the pot before serving to even out the coffee.

💡 Tips

  • Do not let the moka gurgle and puff: it’s a sign of over-extraction and bitterness.
  • Clean the moka only with hot water: no detergents, no dishwasher.

Nitrogen & vacuum sealing
Every pack is sealed in a protective atmosphere — first vacuum, then nitrogen — to remove oxygen. Unopened, the coffee stays fresh for up to about 2 months after roasting. Shelf life depends a lot on temperature and season: a little less in summer, a little more in winter.
Roast profile
We roast in two profiles, depending on your brewing method:
  • Light — great for V60/Aeropress, for those who want brighter acidity and lots of aromatics. Recommended for all pressure-free methods (filter, Aeropress and similar).
  • Medium — great for espresso/Moka, for those who want a more intense flavour with a hint of bitterness. Recommended for espresso and Moka.
Grind
Any grind works, as long as it suits your method. With us you can choose whole beans, or pre-ground for Moka or for filter.
Shelf life
For the best taste, enjoy it within 10–45 days of roasting (60 at most). The roast date is always printed on the label.
