THE 100 HOUR RULE:

The 100-hour rule has been introduced by us on the market as general thinking, we believe that Roasting and then sending the product the same day (or the next day) has no beneficial effect at all on the coffee. On the contrary, there is a risk of delivering to the customer a coffee that is too fresh, and has not developed yet its potential (we know our customers, and we know as well that they can’t wait to open the package and taste our product, but that would be the mistake that a lot of people make!). It is a little bit like for wine and other types of high-quality food and beverage, coffee as well needs what in Central America they call “Siesta”.

100 HOURS TILL YOU CAN DRINK IT!

  1. Roasting
  2. 24 hours of rest in air-tight containers (coffee stabilizes and degassing begins)
  3. Packaging (air-tight containers without valves for the single origins)
  4. 24h more of rest in the packages at a controlled temperature of between 18° C and 24° C
  5. Delivering and you’ll have it in 48h! (We ensure this timing for Italy)

100 HOURS IN TOTAL!!!

After a few hours since you received the coffee, you will be able to consume it at the best of its organoleptic qualities, otherwise, you can choose to hold it at rest for a few days (preferably in a cool place). High-quality coffee can be stored for maximum of 5-6 weeks, then it starts to degrade quickly… Best to know!
