All the coffees produced by Andres Salaverria are carefully processed in its production chain, where the% Brix measurements taken directly on the plant are taken into account to ensure that the coffee is 100% ripe, the harvest of the selected coffee, its traceable process by variety, batch or any other distinctive feature, and by the care in fermentation or in any other specific process of each batch, always taking care of the drying and storage of the coffee.

Since I was a child I have had a passion for growing coffee.
I like challenges and coffee cultivation presents strong challenges, it is worth working and always trying to innovate new things, I also like working with the social and ecological components around coffee cultivation.
I am the fifth generation of coffee growers in my family and have been involved in coffee cultivation for eleven years.
The farms managed by father and son, Don José Antonio and Andrés Salaverria, have always complemented each other in their responsibilities and their work on the farms, with the clear goal of diversifying their coffees and keeping up to date on the most advanced processes that occur in other countries and to make them with their coffees, in addition to their experiments.

Like any green coffee bean, it is grown, processed and harvested at Farm La Esmeralda
The La Esmeralda farm, owned by Don José Antonio Salaverria, is located near the town of Atiquizaya, in the Apaneca - Ilamatepec coffee growing region, in the Atiquizaya district.
The cafes grow in the shade of the farm's trees, at an altitude of between 1,100 and 1,200 meters above sea level.
With a total area of 35 hectares, all hectares are dedicated to the cultivation of coffee by the Salaverria family.
- The varieties grown on the company are Bourbon, Catuaí and Sarchimor.
- The average age of the coffee plants is 25 years.
- Coffee plants grow in sandy and volcanic soils.
- The irrigation system used by the Salaverria family is the sprinkler system.
- The type of cultivation of the company is in the indigenous shade, managed through selective cutting, traditional pruning and manual harvesting of the fruits.
